Stir-Fried Pork with Basil and Snake Beans

This is another great Thai dish.  Packed with flavour, this is a really good option for a dinner party.  It is also versatile, because you can substitute the pork mince for chicken mince.

It is also really easy to make.

Ingredients

  • 600g Pork Mince (I prefer shoulder) - or minced Chicken
  • 400g Snake Beans (if you cannot find snake beans, use plain green beans)
  • 4 cloves of Garlic
  • 2 large Chillies (or more if you like heat)
  • 2 Tbsp Fish Sauce
  • 1 Tbsp dark Soy Sauce
  • 1 Tbsp Caster Sugar
  • Cup Asian Basil leaves (or Italian if you cannot find Asian)
  • Salt to taste
  • White pepper to taste
  • 2 Tbsp Rice Oil (or neutral flavoured oil)

Instructions

  1. Put the garlic and one chilli with a pinch of salt into a blender or pestle and mortar and grind to a fine paste. Slice the remaining chili thinly.
  2. Heat a wok over high heat on the stove. Add the oil, paste and thinly sliced chilli and cook for about 30 seconds. Work quickly because if the garlic burns it will become bitter.
  3. Add the minced pork stirring for 2 minutes to ensure that the paste is well mixed with the meat.
  4. Add the beans and stir-fry for a further 1-2 minutes.
  5. Add the fish sauce, soy sauce and sugar, and stir fry for a further 30 seconds.
  6. Remove from the heat and stir in the white pepper and basil leaves. Serve immediately with steamed jasmine rice.
